La Valle® “Satèn”, a masterpiece of elegance, the definition of Franciacorta.
“Satèn”, a name that evokes the delicacy of silk, a unique wine because it can be made only in Franciacorta, in a marvelous La Valle® interpretation. A brilliant marriage of only white grapes, Chardonnay and Pinot Bianco, that is distinguished by its incredible finesse. A brief passage in small oak casks and a quantity of added sugar smaller than that used in any other spumante create, during the secondary fermentation in the bottle, a magical sparkling wine that gently caresses the palate. Pruning: 10-12 buds per plant Hand-picked into small crates (capacity 16-18 kg)
Production: 10,000 kg per hectare; 2 kg of grapes and 2 square meters of leaf surface per plant. Average time between harvest and pressing: 2 hours
Soft pressing of whole grapes after further sorting of clusters
Cellar production: 6,000 liters/ hectare
Vinification in supervised temperature-controlled inox tanks
Aged for 6-8 months in inox tanks from September to April with the exception of a small percentage, 6-8%, which passes a brief period in small oak barrels
Secondary fermentation: minimum 24 months at controlled temperature on lees
6 months additional aging in bottle
Data at disgorging: alcohol 12.5 %, pH 3.20, total acidity 6.0-6.5 grams/ liter, dry extract 22 grams/ liter, residual sugar 10.2 grams/ liter
