Location: Neviglie (North West Italy)
Grapes: “Moscato bianco”
Vinification: 20% of the grapes are collected at the half of October after an accurate stripping of leaves started from half of july.
60% between beginning and half of November with selection of only the bunches attacked from Botritis cinereous, better known as noble mould.
20% are collected after the half of january during night hours, between h. 4,30 and h.8,00 in
the morning, when the temperature is below –5°C with totally frozen grapes; output of 25% in new barriques of American oak with spontaneous stabilization
alcohol content: 14,85% vol.
sugar content: 114 g/l
total acidity: 9,69 g/l
Color: intense golden yellow.
Nose and taste: Brilliant thanks to its acid component
rich of complex and developed aromas, not forgetting however the pleasantness of the grapes of origin. Easy to notice the scent of purée of ripe apricots, of peaches in syrup, camomile, candied citrus fruits, raisin, cinnamon, paprika, mallow, lemon, lavender, honey, tobacco and liquorice.
Pairing: the paté de fois gras is by excellence the ideal combination for this wine; it’s a first class wine which becomes fanciful with Sushi. Very interesting at the end of the food.
