The Negroamaro "Nutcracker" of the Varvaglione 1921 Winery is a soft and balanced still red wine with a strong ruby ​​color obtained from typical Salento grapes such as Negroamaro and a small percentage of Malvasia Nera. The aromas are complex and intense between ripe fruit, wood and spices. The taste is balanced, soft and with final notes reminiscent of ripe carob. Aged in barrique for 6 months.

Vinification: The grapes are harvested at the first light of dawn and taken to the cellar when the sun has not yet warmed them with its rays.
The grapes used to produce the High Quality Negroamaro come from vineyards with very low production (60 quintals per hectare) to ensure grapes very rich in flavors and nutrients that give strength and aromas to the wine.
The vinification takes place with maceration at a controlled temperature at 26 ° - 28 ° C. After the malolactic fermentation follows refinement in barrique for at least 6 months
Alcohol content: 13.5% vol.
Yield per hectare: 70-80 quintals / hectare
Pairing: Wine for the whole meal. Excellent with red meats and also with shellfish
How to serve: In large goblets in clear, smooth and colorless crystal. Excellent at 18 ° C


The Nutcracker Negroamaro brings to the table all the intensity, great value and character of "Salento I.G.P." Founded back in 1921, the Varvaglione winery represents the Salento wine tradition very well: a family-run business capable of making Salento excellence known far beyond national borders. Its vineyards extend over the territory of the Municipality of Leporano, in the province of Taranto. It is not always easy to practice viticulture in this land that sees torrid summers and long periods of drought. The sea, with its constant breathing, makes winters very mild and helps keep the vines healthy, which derive structure and minerality from a clayey, calcareous and generally shallow terroir.
It is here that Negroamaro is born, the grape that constitutes 85% of the blend of this excellent red wine. The very symbol of Salento viticulture, it is recognizable for its large purple berries with a skin rich in bloom. The extraordinary vigor makes it suitable for arid environments and the most diverse types of soil. The equally precious Black Malvasia berries are often used, as in this case, to give the wine greater softness while the aging in barrique adds hints of spice and wood to the complex aromas of ripe fruit. Sumptuous and balanced, the `` Nutcracker '' is an engaging wine, which goes well with any meal, especially dishes with an intense flavor: tasty baked pasta, succulent grilled meats but also delicate crustaceans.
