Vinification: The grapes are harvested at the first light of dawn and taken to the cellar when the sun has not yet warmed them with its rays.
The grapes used to produce the High Quality Negroamaro come from vineyards with very low production (60 quintals per hectare) to ensure grapes very rich in flavors and nutrients that give strength and aromas to the wine.
The vinification takes place with maceration at a controlled temperature at 26 ° - 28 ° C. After the malolactic fermentation follows refinement in barrique for at least 6 months
Alcohol content: 13.5% vol.
Yield per hectare: 70-80 quintals / hectare
Pairing: Wine for the whole meal. Excellent with red meats and also with shellfish
