Density Of Planting: 4,000 – 8,000 Vines per hectare.
Yield: 120 quintals per hectare.
Vinification: In steel at a controlled temperature.
Harvesting: by hand into crates. Pressing: gentle in reduced environment using nitrogen, with cold maceration for 10-12 hours.
Fermentation: alcoholic at low temperature with selected yeasts.
Batonnage: in stainless steel with special stirrers until April.
Stabilisation: physical, cold.
Ageing: In steel at low temperatures.
Quantity Produced: Approx. 80.000 bottles.
Tasting notes:
Colour: pale straw yellow with greenish glints. Aroma: fresh flowery hint of white grape and elder flowers, ripe pale white fruit such as apple and pear.
Flavour: medium-sweet and warming with sustained but well-balanced acidity, pleasant aftertaste of almond.
Alcohol Content: 12,50% Vol.
Acidity: 5,90 g/l.
Residual Sugar Content: 2,3 g/l.
Serving Suggestions: Starters, light pasta dishes also with sauces, risottos, fish (especially freshwater lake fish), egg-based dishes, white meat.
