The Mediterranean wine: Rapitalà with Bouquet, defines the Mediterranean wine and, as always, produces it, starting from a precise agronomic plan: nowhere else in the south is the soil so suitable for the growing of richly aromatic grape varieties such as those chosen at Rapitalà for the planting of new vineyards: grillo, sauvignon and viognier. The result is a fresh wine which bursts forth in a vibrant way with the radiance of its fruity notes, and which merges into a marvellous floral melody.
The grapes: Grillo - Sauvignon - Viognier
The vineyard: more than 8 hectares of selected parcels in the Tenuta Rapitalà situated at from 300 to 550 metres above sea level, trained by the Guyot basso system on clay soil with low yields per hectare and notable for a wide range of temperatures during the summer period. A careful choice of clones: 2 French ones for the viognier, 6 for the sauvignon, with special stocks which tolerate the warm clay, and 2 clones of grillo.
The vinification: the grapes are picked and vinified separately, as they ripen at different times. At the Tenuta Rapitalà the sauvignon and the viognier reach the correct ripeness at the end of August, the grillo is picked during the first ten days of September. In order to preserve all the aromas of the three grape varieties the balance between sugar and acidity is carefully controlled at every stage of the ripening, taking care to avoid any kind of water stress to the vines. An exact technique of vinification is used for the three grapes, with subdivisions of the various qualities of must which are slowly fermented. It is in this way that these grape varieties express their best aromatic characteristics.
The wine: pale gold colour with green tints, a deep, gentle bouquet of flowers and tropical and citrus fruits and a balanced, fruity, clean flavour, finishing with citrus notes. It is a fresh wine, fruity, elegant and velvety which expresses the aromas of this product at their best.
Analytical details: 12.5% alcohol, 5.79 g/l total acidity, 3.41 pH, 5.51 g/l residual sugar, 20.2 g/l dry extract.
Food matches: excellent with seafood (oysters and sea urchins) and uncooked dishes (sushi and sashimi), but goes equally well with fine fish (swordfish, sea bream, shellfish) and first courses based on vegetables and cheese.
