Grapes: Barbera 100 %
Origin & Soil: From the Costamiòle vineyard in the Agliano area.
Clay soil, very light in colour, and rich in calcareous marl.
Taste: Deep, ruby colour with violet reflexes. On the nose, rich fruit aromas particularly of plums and cherries with hints of violets, cinnamon, cocoa and leather. On the palate, full with soft complex tannins. Due to its structure and characteristics it is a perfect match for roast meats, game and mature cheeses.
Climate Vintage: The 2005 vintage has an irregular climate but to sum up it is satisfying. After a relatively mild winter, with scarce precipitations, there is a fresh but poor in rains spring. At the start of summer, there is an heavy thermic rise with some fresh periods but without rains.
September starts with some rainy days. Then the climate has stabilized and it comes back summer until the end of the month, with large temperature ranges, useful to exalt the sugar and the aromatic substances stored in the grapes.
Vintage: On arrival in the cellars, the grapes were destemmed and crushed. Fermentation took place in wooden vats of 50 hl. and in order to optimise the maceration process which lasted 10 days, 4 daily pumping over was carried out at 30° C. When the fermentation was completed, the wine was transferred into barriques (225 l.) where malolatic fermentation took place.
The wine aged in barriques for 12 months and a further year in the bottle in the Prunotto cellars before release.
