CELLAR
Harvested in small perforated baskets, and immediately destalked and crushed, then macerated on the skins for 5-7 days at a temperature of 22-24°C; malo-lactic fermentation is completed before winter sets in. The wine then stabilises in stainless steel before bottling; it is ready for dispatch after maturing for 2-3 months in the bottle.
Alcohol: 12-13% by vol.
Total acidity: 5-5.5 g/l tartaric acid
Dry extract: 24-26 g/l
TASTING NOTE
Intense ruby-red wine with purplish rim. A refined nose with cherry and plum aromas and notes of spices and almond. It has a fruity and vinous flavour of ripe fruit, fine tannins on the palate and a full body. A wine of the Piedmontese tradition, and a perfect match for Italian pasta dishes.
Serving temperature: 14-16°C – serve in glasses of medium capacity.
