GRAPE BLEND: Malvasia Nera, Lanaiolo and Colorino
VINIFICATION: The grapes of the three vines are picked when they reach the fenolica maturation and are vinificate all toghether.
In the skin on vinification, the alcoholic fermentation is conducted by the autochtonous yeasts.
Re-passing and deléstage contribute to the extraction of poluphenols, without enriching too much the wine of astringent or bitter tannins for the type of wine we want to obtain.
The temperature is controlled by means of surface waterflow in stainless steel.
After 10 days of fermentation and maceration, we proceed with the drawing off and the soft pressing of the vinace through vertical wine press.
Subsequently the wine is moved to the tanks made of vetrifcate cement where the malolactic fermentation and the stabilization before the bottling ended.
The bottling happens within the spring of the following year to the grape harvest.

L’Angolo Perduto is made only with autochtonous vines and it is the result of a traditional grape’s cultivation, without exasperate the ACCORGIMENTI TECNOLOGICI.
Its perfumes and its tastes are those that the sun and the grounds of the Vecchio Maneggio succeed in transmitting, warm, yielded and winding. With this wine the idea of the simplicity, of the health and of the genuine are accompanied to that of a refined wisdom and to the rediscovery of feelings like smells and tastes forgotten.
L’Angolo perduto opposes him to the omogeneizzazione of the feelings without favoring what commonly is called international taste. You perfectly combines to all the dishes of our kitchen, cold cuts and seasoned cheeses
