Peculiarity: the characteristic that makes this wine unique lies in the uniqueness of the wood essence used for aging: only Italian chestnut. It is the first and only Italian barbera aged in chestnut wood barrels obtained from woods already used since the 16th century. It is in fact an ancient and typical aging technique of the Italian tradition but now abandoned.
Vinification: Spurred cordon farming in well-exposed clayey-calcareous medium-textured soils, combined with permanent grassing, allows for optimal phenolic ripening of the grapes.
The grapes are selected strictly by hand and directly on the vineyard at the first light of dawn. They are collected in small baskets and immediately taken to the cellar when the sun has not yet warmed them with its rays. Fermentation takes place in a floating hat, handled manually with frequent pumping over. It is carried out at a temperature of 26 ° -28 ° C for about 8 days.
The wine ages in 500-liter barrels of Italian chestnut for at least 1 year. The wine is bottled without filtration
