Peculiarities: Wine born by the will of Prof. Scienza who, towards the end of the 70s, firmly believed that in Oltrepò a great Pinot Noir could be obtained starting from French clones. Adriano Doria then decided to select from the best Pinot Noir clones the most suitable for the climatic conditions and territory of the Doria Company. The result is a surprising Pinot Noir deriving from 3 different clones and aged in French barriques. The first vintage put on sale is dated 1985.
Vinification: The sixth of the plant is very important, which in Oltrepò must have a high density of plants and low production per vine.
The grapes are selected strictly by hand and directly on the vineyard at the first light of dawn. They are collected in small baskets and immediately taken to the cellar when the sun has not yet warmed them with its rays. The vinification takes place in the traditional way, with numerous manual punching down, at a temperature of 26 ° / 28 ° C for 8 days.
The malolactic fermentation takes place in Nevers barriques
