Grapes: 100% Pignoletto.

Vineyard: vines with a Guyot training system with high-density over 4,000 plants per hectare, with spurred cordon pruning, on fertile medium-textured soil in the province of Modena.

Vinification: the grapes, harvested in the first ten days of September, undergo cryomaceration in small tanks at a low temperature for 2-3 days. After alcoholic fermentation on decanted must with selected yeasts and at a controlled temperature, second fermentation takes place, using the Charmat method, for 7-10 days at a controlled temperature of 13-15°C.

Description: a pale straw yellow colour; white mousse with a refined and persistent perlage; aroma with hints of jasmine; long, mellow and dry flavour.

Alcohol/Vol.: 11%

Food pairing: ideal as an aperitif, excellent throughout a meal especially with risottos, tortellini (filled pasta) and fish-based dishes.

Serving temperature: cool 6-8°C.
