Rosé del Cristo
Lambrusco di Sorbara DOC, Spumante Brut
Grapes: 100% Lambrusco di Sorbara.
Vineyard: vines with a Guyot training system, with spurred cordon pruning, on a fertile sandy soil in the Sorbara area, in Cristo, 200 meters from the banks of the river Secchia and 20 kilometers north of Modena.
Vinification: in early September, the grapes are manually harvested in 18-kg crates and immediately undergo soft pressing. Alcoholic fermentation takes place in steel tanks at a controlled temperature (14-16°C). In the spring following the harvest, after selecting the cuvée, the sparkling process takes place in bottles using the Metodo Classico.
Description: a refined and persistent perlage; a pale pink colour with salmon pink tinges; a delicate aroma with hints of dog roses and carnations, leading to sensations of wild strawberries and raspberries; a well-structured flavour with appetizing freshness, and a long, harmonious fruity finish.
Alcohol/Vol.: 12%
Food pairing: for special occasions, meat-based first courses and mushrooms, Parma raw ham, Culatello di Zibello ham, roasted fish and red meat.
Serving temperature: cool 2-4°C.
