Grapes: Lambrusco Salamino di Santa Croce.
Vineyard: mainly newly planted vines with a Guyot training system on mediumtextured soil containing sand and silt in the central area of the plain in the province of Modena.
Vinification: the grapes, harvested in early October, are vinified in red; after alcoholic fermentation at a controlled temperature with selected yeasts, second fermentation takes place, using the Charmat method, for 4-5 days at a controlled temperature of 12-14°C.
Description: lively mousse with purple tinges; refined perlage; deep ruby red colour; intense and fresh aroma; semi-sweet and sapid flavour.
Alcohol/Vol.: 8%
Food pairing: cold cuts, oven-baked lasagne, medium-mature cheeses, pastries and biscuits, fruit mousse, red fruit tarts.
Serving temperature: cool 9-12°C.
