Grapes: Lambrusco Grasparossa, Lambrusco Salamino, Lambrusco Sorbara.
Vineyard: vines trained on double curtain espalier and with spurred cordon pruning, on fertile medium-textured soil in the central area of the province of Modena.
Vinification: the grapes, harvested in the second half of September, are vinified in red; after alcoholic fermentation at a controlled temperature with selected yeasts, second fermentation takes place, using the Charmat method, for 4-5 days at a controlled temperature of 12-14°C.
Description: mousse with a purple rim; refined and persistent perlage; ruby red colour; intense aroma of wild berries especially raspberry; mellow, vinous and fruity palate.
Alcohol/Vol.: 8%
Food pairing: cold cuts with tigelle (flat bread) and gnocco fritto (fried dough puffs), tagliatelle with a meat sauce and roasted red meat.
Serving temperature: cool 9-12°C.
