Lambrusco di Sorbara DOC
Grapes: Lambrusco Sorbara, Lambrusco Salamino.
Vineyard: vines trained using the GDC double curtain system with spurred cordon pruning, on loose medium-textured sandy soil in the area between the river Secchia and the river Panaro north of Modena.
Vinification: the grapes, harvested at the end of September, are vinified in red. After alcoholic fermentation at a controlled temperature with selected yeasts, second fermentation takes place, using the Charmat method, for 4-5 days at a controlled temperature of 13-15°C.
Description: light ruby red with purple tinges; light pink mousse with a refined perlage; broad, intense and persistent aroma with hints of violet; mellow, full-bodied flavour with fruity aromas.
Alcohol/Vol.: 8%
Food pairing: cold cuts, first courses with a meat sauce, fried vegetables and fish.
Serving temperature: cool 8-10°C.
