Santarosa Pinot bianco collio doc
The history of Collio’s vineyards dates back to pre-Roman times and crosses
the Middle Ages, a period when the wines from Collio were valued
throughout Europe. The Consorzio Tutela Vini del Collio was created in
1964, one of the first wine associations in Italy, and in 1968 it received the
recognition of the Denomination of Origin (Collio DOC). One of the
flagships of the winery, this elegant grape has found its ideal terroir on the
hills of Collio, where the yields are very low, thus giving extremely smooth,
structured wines that can age for a very long time.
Tasting notes
Straw yellow in color with golden hues. Full on the nose, recalls flavors of
ripe and tropical fruit such as pineapple, cantaloupe, banana, and baked
apple. Dressed with a tantalizing note of butter, the mouth entry is very wellbalanced
and the finish is long and persistent.
Food Pairing
Ideal with light appetizers, steamed fish and sea fish, delicate fish risotto and
pasta or vegetable soups, spaghetti with red mullet, tagliatelle with saffron
flatfish, seafood soup with polenta, oven-baked gilthead bream, turbot with
potatoes and bouillabaisse.
