The history of Collio’s vineyards dates back to pre-Roman times and crosses
the Middle Ages, a period when the wines from Collio were valued
throughout Europe. The Consorzio Tutela Vini del Collio was created in
1964, one of the first wine associations in Italy, and in 1968 it received the
recognition of the Denomination of Origin (Collio
DOC). Pinot grigio originated in Burgundy, but found its way to Switzerland
in the 1300s. From here, the grape made its way to northern Italy, where it
became the most popular white wine of Italy, and then the most popular
imported white wine in the U.S.
Tasting notes
Intense pale golden yellow color. The nose exudes fruit notes of apple,
damson plums and hawthorn opening up to pineapple, grapefruit and pear
notes that blend with the floral aromas of acacia and broom. On the palate, it
immediately shows good acidity, well-orchestrated by pleasant softness and
good structure, followed by a warm mouth feel so as to reach the perfect
balance.
Food Pairing
Excellent with fried fish and grilled fatty fish; perfect with pasta and risotto
with vegetables
