The history of Collio’s vineyards dates back to pre-Roman times and crosses
the Middle Ages, a period when the wines from Collio were valued
throughout Europe. The Consorzio Tutela Vini del Collio was created in
1964, one of the first wine associations in Italy, and in 1968 it received the
recognition of the Denomination of Origin (Collio DOC). This grape is one
of the most ancient indigenous varieties from Friuli, whose presence is
documented from1299. The Ribolla gialla from Collio has gained great
success in recent years thanks to its freshness, versatile and food-friendly
character, suitable both as an aperitif or to accompany every meal.
Tasting notes
This is an ancient variety passed on to us by the Friulan viticulturist of the
past; intense straw yellow in colour; the nose shows notes of spring flowers
and Golden Delicious apple. Full bodied on the palate with acid freshness,
providing length to the aroma and taste
Onion skin colored; the nose has fruity notes of ripe pear and pomegranate.
The mouthfeel is dry but with good flavour and structure, harmonious, ample
with memories of red fruits.
Food pairing
It pairs well with light appetizers, such as fresh cheese, cold cuts and raw
vegetables. Ideal companion to seafood and delicate freshwater fish dishes.
Excellent with spring herb omelettes.
