The winery Bisol invented with noSO2 a Spumante without sulfur. It was conceived for people who are allergic to sulfites or who are sensitive to sulfites. So they too can enjoy an excellent Prosecco without being sorry.
"The Prosecco noSO2 was officially introduced at Vinitaly 2009, and it is produced only in small numbers. It is produced in the Altamarca Trevigiana" says Desiderio Bisol, the technical director of the company.
The name of this particular Prosecco suggests that there is no added sulfur dioxide (SO2) - so NO SO2. Furthermore, in dialect "no so" means that something is mysterious and yet to be discovered.
So this is a special version of Prosecco, which is reminiscent of the good sparkling wine that our farmers produce in a small production.
This valuable Spumante is, as the packaging, extremely functional: the bottle is wrapped in aluminum to protect the wine from light, which could destroy the delicate structure of the wine.
Through long trials, the Bisol family managed to produce a prosecco with no added sulfur dioxide. The selection of the yeasts prevents that much sulfur dioxide is formed during the vinification. So this Prosecco contains only traces of this molecule. "The result has surprised us and filled us with joy," says Desiderio Bisol. "Our customers will reward us for our years of work on this version."
