The Novarè method is a way of going back to the roots in order to bring out the natural uniqueness of our territory and its special link to “la Corvina”.

We are entirely dedicated to shedding light on this extraordinary heritage of agricultural knowledge that throughout the years has settled in our soils.

We grow our vines “a trapezio” so that there is as much shade as possible over the grape bunches, allowing just the right amount of ventilation.

In September, when harvest is currently carried out, we interrupt the flow between plants and grape bunches; we leave the grapes in the fields until the end of October, as was done many years ago. Shielded from the sunlight and cradled by the wind, the grapes begin a “second maturation” on the vine: the sugar level remains stable while the aromas continue to intensify and evolve. Thus, a new “creature” is born from the original interpretation of centuries-old experience.

In the bright transparencies of the color, the freshness of the wine is seen; it is supple, ruby-red and has a low ABV, 12.5%. A young and immediate wine, perfect to drink today. Velvety and crisp fragrances that bring together hints of aromatic herbs with the aromas of ripe fruit, ready to be picked.
