Among the hills that surround the lakes of Santa Massenza and Toblino, in an oasis of peace where time seems to have stopped, we find the farm and distillery of Francesco and Alessandro Poli.
Here, since 1998, the vineyards have been cultivated according to the principles of organic farming, in full respect of a land with a thousand facets like that of Santa Massenza; the latter, in fact, is a border area and, as such, combines the climate of the south with the continental one, sees Mediterranean and alpine plants coexist and has unique landscapes.
This grappa comes from fresh and selected pomace of red Schiava grapes, an indigenous vine grown in Trentino. The very fresh and still wet must pomace is slowly distilled to fully safeguard the aromas of the Schiava grape with the bain-marie method in a discontinuous steam still, typical of Trentino. The grappa is made with an alcohol content of about 70° and is then left to rest for about 8 months. For bottling, it is diluted with spring water at 42° Vol.
