The manufacturing secrets of this Norman brandy have been passed down from generation to generation since the 16th century. Made from more than 200 varieties of apples but also pears, harvested by hand, then pressed and fermented, Calvados is actually distilled from cider. There are several distillation processes according to the AOC, but AOC Calvados is produced exclusively by simple distillation, in a column still that produces 72% brandy. It is then aged for at least two years in oak barrels, but often matures much longer, over time developing a beautiful amber color and complex aromas of caramelized apple, honeyed flavors and sometimes a hint of the exotic. Endowed with a silky texture and a beautiful acidity, Calvados is enjoyed cold.
