Cognac-based Audemus Spirits is the first microdistillery of its kind in France and one of the first in the world. Umami gin is a product inspired by the 5th taste: flavour. The base flavor comes from southern Italian capers distilled to keep the iodine aroma fresh. It is combined with a glutamate-rich Parmesan-infused distillate. It rests in ex-cognac barrels for several months.

Typically colorless to the eye, it is a fresh, slightly salty gin with a unique flavor. Botanicals: Sicilian capers, juniper, parmigiano reggiano, bergamot, ex cognac finish.
