Foursquare Distillery produces innovative and complex Rums but without sacrificing the drinkability of the product. In addition, the use of different types of barrels, such as ex-sherry, ensures that Foursquare's rums are always smooth and round. The distillery produces rum exclusively from molasses and uses two types of stills: pot still and single column. The stills operate under vacuum, which allows distillation to be achieved at a lower temperature (the lower pressure requires less energy). Of course, they are all bottled without added sugar, and if an age is given it refers to the youngest rum in the blend.
BETWEEN DOORLY & FOURSQUARE
Foursquare Distillery has two main product lines, one labeled Doorly's and one labeled Foursquare . The Foursquare line bottles experimental, limited-production editions. Richard gives room for his imagination each year, often experimenting with unusual aging such as Madeira, Port or Calvados. Doorly's Line, on the other hand, is the backbone of the company. They are the best-selling rums in Barbados and follow a precise recipe, the result of experience honed over the years.
DOORLY'S
Doorly's is the historic Barbados brand with ancient origins. To better control taxation in 1906 the Barbados government passed the Rum Duty Act (now thankfully repealed) that forced distilleries to resell rum exclusively in cask, prohibiting them from reselling in containers smaller than 37 liters (10 gallons). Because of this, many Bridgetown merchants became bottlers, including Martin Doorly, whose Macaw Rum became the most famous on the island and the first to be exported.
