Vermicelli are one of the oldest shapes of pasta, Neapolitan, so that the pasta producers were once called "vermicellari". There is a document from 1284 in which they give notice of their sales, while the first published recipe likely dates back to the fifteenth century, the "Libro de arte coquinaria" (1464-65), written by the famous Mastro Martino. Their name comes from the shape, which resembles that of small worms.
