For the production we use only high-quality Canadian durum wheat semolina (Canadian type). Due to its high protein content this is one of the best types of wheat. The fresh eggs come only from selected farms. They are controlled and opened by a worker by hand.
Drying is the most important stage in the manufacturing process. The Pastificio Caponi here differs significantly from other manufacturers, because the pasta is dried very slowly and carefully at room temperature for about 70-80 hours.
