Rosso Selvatico rice (wild red rice) is a whole grain rice with high nutritional value. It is the rice containing most vitamins, trace elements and mineral salts. Of an average length, its crystalline grains, of red ruby color are precious for their antioxidant contents and high digestibility. Rosso Selvatico rice, not peeled, is also the rice which requires the least human interventions. It is ideal for the preparations with green vegetables and is unmatchable to accompany fishes with white flesh or for the rice salads.
Ingredients (serves 6): 500g Ermes Red Rice, 6 fillets of anchovies, 3 tablespoons salted capers, 6 oil-dried tomatoes, 1 clove of garlic, 1 chilli pepper, 4 tablespoons extra-virgin olive oil.
Preparation: Put in a pan the oil with the anchovies, let them melt then add the diced tomatoes, the capers washed out of salt, the chilli, the garlic and cook for a few min. Put the rice in abundant, salted cold water, bring it to the boil and let it cook for about 30 minutes. Drain the rice, pour it in the pan and let it flavour for 5 minutes
