The Nocellara Etnea olive variety, comes predominately from the volcanic land around Mount Etna, in the eastern part of Sicily.
This pleasantly green oil has a taste of green fruit and is of medium high intensity. It has an agreeable nose of grasses and of fresh vegetables. There then emerges a persistent bitter and spiciness, that is in perfect harmony with the initial flavors and its natural consistency.
Uses: it combines perfectly with a seafood starter,vegetables, grilled cuttlefish, fresh cheese, couscous.
