Characteristics:

The smell sensations are of fresh grass and sweet almond. The taste is fine with balanced bitter and spicy notes. The colour is bright yellow with evident green reflections.

Recommendation:
Use the raw oil for delicate dishes. The taste of this oil doesn't overpower the taste of the dish.
Ideal with fish starters, first courses with shellfish or fresh cheeses. Excellent condiment for raw and cooked vegetables.
