Bitto is produced exclusively with milk produced in the mountain pastures of the province of Sondrio and some surrounding municipalities of the High Brembana Valley (Averara, Carona, Cusio, Foppolo, Mezzoldo, Piazzatorre, Santa Brigida and Valleve) and the province of Lecco (Introbio and Premana). The Celts can be traced back to the ancient working techniques and the name Bitto 'Bitu' which means eternal.
