Merkki: Pecorino nero di Sicilia

This Pecorino is also called Pecorino Pepato (peppered pecorino), because the loaves have a wonderful black pepper crust.

The loaves weigh about 2 kg.

This Pecorino is aged for about 4 months and has a soft, wrinkled rind and a bright straw-yellow paste, which is compact and smooth.

The rind gets its dark color, because it is brushed by hand with olive oil and ground pepper.

A complex and very nice product with a hearty taste of pecorino with a little twist.
