: Taleggio D.O.P.
A great cheese, with a great history (more than 1 thousand years), produced in the great plain "pianura padana", from west to east of north Italy. It has got a thin rind, soft, with light grey moulds that are eatable and loved by Italian gourmets. The colour of "pasta" goes from white to light yellow. The taste is mild , slightly sour and flavoured. Taleggio is a natural cheese, alive, and its ripening goes on all the time. Characteristics:
Each Taleggio cheese weight from 1,7 to 2,2 kgs., according to the technical conditions of production. Cheese is quadrangular parallelepiped, with sides of 18-20 cms.
The rind is thin, of soft consistence and its colour is natural rose, with presence of characteristic grey and green light sage colour mould.
The paste is uniformly compact, softer under the rind and at the end of seasoning, friable to its centre.
The paste colour changes from white to pale yellow, with some small circles.
The taste is sweet, with light acidulous vein, slightly aromatic, sometimes with truffle aftertaste; the odour is characteristic.
Preservation:
The Taleggio cheese is natural: finished the 35-40 days of ripe in special dairy cells or in caves, its ripe continues up to when the cheese is consumed. The Taleggio must be preserved with care in order to maintain its taste, its aroma and its pleasant consistence.
It is better to buy quantity of Taleggio that can be consumed within 5-7 days by the acquisition. In this way, you will have the product with the optimal characteristics, even if the Taleggio can much longer be preserved.
The Taleggio is excellently preserved for weeks in the refrigerator, between 0°C and 6°c according to the ripe degree; it is opportune to wind it in a damp cloth to maintain the softness of the rind.
The Taleggio must be preserved in a wrap in which is normally sold. In any case, it must be used a wrap that allows the passage of the air. Don't wind it, therefore, in plastic films, that prevent the passage of the air causing fermentation.
