The Pecorino Brigante is a sheep's milk cheese which is produced in Sardinia from whole sheep's milk.

It is only briefly matured, so it has an intense aroma and a delicate and refined taste. Recognized for the slightly yellow crust and the characteristic welts. The dough is white to pale yellow with very small holes.

Ideal as a table cheese but also as an ingredient in hot dishes and salads.
