Pressed with the feet in wooden presses, maceration with skins for 6 months and spontaneous fermentation in amphora. Racking and aging in the same containers for another 3 months. Iago Bitarishvili's Chardakhi is a fresh macerated, lively and energetic white wine. Of fruit, egg, mint and hydrocarbons, a wine of great character, fine and long, reveals a purity finish and a pleasant oxidative streak.

Pairings: Excellent to accompany meat stews.
