Harvest: Manual harvest in baskets.
Fermentation: maceration of the grapes at a low temperature of 8 ° C for five days. Three weeks on its skins with daily pumping over. Malolactic fermentation in oak barrels.
Aging: eighteen months in selected Allier oak barrels (France). Eight months in the bottle.
Organoleptic characteristics: very intense ruby red color with marked violet reflections. Raspberry, cassis, wild cherry, chocolate and vanilla spices. Good structure, delicate tannins with an important acidity in the mouth. Red and mineral fruits prevail with well balanced tannins, supported by the aging in wood. Complex wine, pleasant and persistent in the finish.
Pairings: With traditional Argentine barbecue (selected premium cuts of meat from Pampa arranged on an open grill), empanadas and chocolate desserts with red fruits.
