Right at the beginning, it rises thick. It smells of apple, pear and caramelized pineapple. In the mouth it is rich and shows its own character, detached from all the rules.

It was harvested by hand, processed in the basket press after 48 hours of aroma extraction, and then spontaneously fermented in a medium-bodied barrel (600L oak barrel) for at least 15 months.
