DESCRIPTION
Champagne Ayala "Brut Nature" is an important wine of the Maison Ayala. A centuries-old estate, it was born and extends for about eighty hectares in the countryside of Aÿ in Champagne, the beating heart of French wine production. The temperate oceanic climate, with warm summers and mild winters, as well as the predominantly calcareous soil, allow the Chardonnay, Pinot Nero and Pinot Meunier vines to thrive, like nowhere else in the world. These grape varieties are those that characterize the entire area and therefore also contribute to the creation of the Ayala Champagne. The Ayala "Brut Nature" Champagne, in particular, is made with 40% Chardonnay, 40% Pinot Noir and 20% Pinot Meunier. The wine follows the classic sparkling process of the Champenoise Method and, before being ready for final bottling, it spends 48 months refining in the cellar on first choice yeasts that integrate and complete the refinement of this extraordinary wine, making it complex and balanced. The final result is a pure champagne, clear, decisive, very dry, which does not discount, but also for this extremely fine and elegant, with a very delicate perlage, an almost silky bubble, not at all aggressive; the term Nature highlights precisely the fact that no sugar dosage occurs (as normally happens for the other versions, namely Brut, Extra Brut, Dry, etc.).
