White asparagus are a type of asparagus grown underground and which is prevented from exposure to sunlight.
In Italy, white asparagus are typical of the northern areas, especially the Veneto, Lombardy, Friuli and Trentino Alto-Adige regions.
They can be steamed or boiled for a variable time of 10-18 minutes depending on the thickness. A trick to cook the asparagus is to dip them together in the bunch upside-down, so that the upper tips are steamed and only the hardest base is boiled in contact with boiling water (there is also a special pot , suitable for this type of cylinder-shaped cooking, high and narrow).
Once cooked, the white asparagus are used for various preparations: so boiled and left to cool can be served in salads, or sautéed in a pan or baked, or put in omelettes and quiches.
