The so-called “Lampare” are fished in the spring-summer period by the boats of Cetara because of the lights that attract the fish into the nets and thanks to a traditional purse-seine technique, the anchovies are still alive when they are hoisted into the boat. The proximity of the plant to the fishing site allows the fish to undergo the first phase of processing just a few hours after capture. Very important for blue fish which has among its characteristics that of deteriorating easily.
Today the processing of anchovies, completely handmade in Italy, respects that tradition handed down for generations that enhances the product by enhancing its quality and taste.
