The Beef salsiccia is made from the meat of the Brown Alpine cattle reared by the farm Richiedei in Pezzaze and slaughtered and processed by the butcher Alebardi.
Even today, the salsiccia is made from an old recipe from the grandfather Giuseppe Alebardi. The meat is freed of fat and nerves and chopped along with red wine, red garlic from Nubia, salt, pepper and spices and mixed.
Thanks to this process we obtain a compact, lean, homogenous and delicately flavored sausage.
Ingredients: Beef 75%, pork 25%, salt, pepper, garlic from Nubia, Red Wine, nitric acid, ascorbic acid.
