The Maya Modican chocolate bar is made with 60% organic cocoa from Ecuador and Mascobado organic whole cane sugar. The Ecuadorian cocoa that we select has hints of dried fruit and coffee. The matching of this cocoa with the Mascobado sugar, which is very aromatic as well with hints of licorice, mainly gives this chocolate the flavor of an ancient time. This bar was one of the first experiments of Donna Elvira, who wanted to create not only a special matching but also to find a cocoa with peculiar characteristics. This research focused in particular on Central and South America and continues still today.
