The origins of the BIOBIO' farm's activities date back to the passion for the land of Giambattista Rizzardini, great-grandfather of the current owner, Dr. Sara Rizzardini, who in 1884 had a few cows to meet her family's needs.
Over the generations the farm was gradually expanded, buying new land and increasing the number of cattle.
A decisive step came in 2002 when the conversion to the organic method took place.
Today the BIOBIO' organic farm is mainly dedicated to raising Razza Rendena Trenitna dairy and beef cattle, which are guaranteed a natural and balanced diet: the animals are fed hay grown on the farm and cereals from certified organic farming.
BioBio cheeses are almost entirely raw milk, thus expressing distinctive characteristics related to the animal's pasture.
We immediately noticed a well enveloping stem on the palate, with character but at the same time soft and delicate, which can please both enthusiasts and consumers less accustomed to particular cheeses.
